2-Ingredient Creamsicle Cocktail!

/ Friday, June 26, 2015

Summer evenings are for all-night fun having! Skip the obligatory fruit salad finale and keep the party going with a boozy treat that's more cocktail than dessert. That's what your friends really want. Take a screen shot. Pin it to your drink board. This trick's about to make your summer...

You guys know my rule when it comes to summer drinks: The fewer ingredients the better. Set yourself up for tipsy bartending success! You thought three ingredients was a breeze! Wait until you try this two ingredient combo: Vanilla ice cream and Grand Marnier.

I call this drink The Creamsicle Cocktail. It's unmatched deliciousness is almost unfair considering how stupid-easy it is to make. Why is it a creamsicle? Um, because vanilla ice cream and orange liqueur takes like the 21+ ice cream truck treat of your dreams. Bonus points for being frosty and amazing on hot, sticky summer nights.

Full disclosure: I totally stole this idea from fiancé. But in my defense, I improved upon his seed of a good idea and made it a bazillion times better. His Grand Marnier–spiked milkshake has milk in it. Milk! Bless his heart.  That just dilutes you drink! The only liquid you'll find in my version is cold hard booze.

When I was shooting this recipe for my cocktail post over on Freutcake, I originally divided it among cute little cups. Adorable (obviously) but I felt like I was lying to you guys. No one wants that small of a cocktail. Bite the bullet, buy in bulk and make enough for everyone to have a big-girl-size cup of their own. That means double, triple or even quadruple this recipe, ladybird!

THE FROZEN CREAMSICLE COCKTAIL
SERVES: 2 regular or 4 small

1 pint vanilla ice cream
2 ounces Grand Marnier

Blend the ice cream and Grand Marnier in a blender until smooth and combined, scraping down the sides of the blender if needed. Divide among glasses.

Note: Change the flavor by experimenting with another liqueur, like Chambord or Creme de Cassis!
