Sparkly Red Raspberry Pimm's Cocktail

Hey there, lovelies! Things have been super (super) busy in the test kitchen, so I figured a cocktail post was in order... 
My Sparkly Red Pimm's, inspired by the high-heeled logo of the new musical Kinky Boots! It gets its sweet-tart flavor from Pimm's No. 1, lemon juice, champagne and raspberries. Make a pitcher of 'em asap! Here's how you do it...
SPARKLY RED PIMM'S
SERVES: 6

1 cup Pimm’s No. 1
1/2 cup gin
2 tablespoons lemon juice
2 tablespoons grenadine
4 cups champagne or sparkling wine
1 cup raspberries

Stir together the Pimm's, gin, lemon juice and grenadine in an ice-filled pitcher. Strain into chilled flutes; top with champagne and raspberries.

  2. I just recently discovered Pimm's and am a huge fan. Think I'm going to have to give in and buy a bottle. This will be the first cocktail I try!! :)
