The Pink Lady Crisp! Easy Dessert Recipe for Almost-Spring Entertaining!

Good morning, lovely friends! Before we get caught up in the week, I'd love to share a quick dessert recipe with you: my Pink Lady Crisp! It's my favorite meal-ender for a casual get together (which is why I made it for our dear friend last night!) or a special weeknight meal. Pink lady apples and sweet-tart raspberries bake together to give the filling a rosy flush. Feel free to swap in strawberries or a stalk of rhubarb depending on what's around. Tip: I like to double the crumb topping and freeze the extra for last-minute dessert making—it'll keep in the fridge for up to 1 month. Anyway, if you're in the market for a homey, easy-to-bake treat, here's how you make Pink Lady Crisp...

 

THE PINK LADY CRISP
SERVES: 6

FOR THE FILLING

3 Pink Lady apples, peeled and cubed
1 cup fresh raspberries or frozen raspberries, thawed
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 tablespoon orange juice
1 teaspoon vanilla extract
1/4 teaspoon cinnamon 

FOR THE CRUMB TOPPING
1 cup all-purpose flour
1/2 cup old-fashioned oats
1/2 cup packed light brown sugar
1/2 cup roughly chopped raw almonds
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1 stick cold unsalted butter, cut into cubes
Vanilla ice cream, for serving

1. Preheat the oven to 350˚. Line a baking sheet with aluminum foil or a silpat. 
2. Make the filling: Toss the apples, raspberries, granulated sugar, brown sugar, orange juice, vanilla and cinnamon in a large bowl. Divide apple mixture among 6 ramekins (or transfer to 1 medium baking dish). 
3. Make the crumb topping: Put the flour, oats, brown sugar, almonds, salt, almonds and butter in another large bowl. Cut the butter into the dry ingredients using your fingers, pressing and rubbing, until the butter in incorporated and the mixture sticks together when pressed between your fingers. Divide the crumb topping among the filled ramekins. Arrange on the lined baking sheet and bake 30 minutes or until the topping is golden and the filling is bubbling. Let cool 5 minutes, then serve with vanilla ice cream
