Easiest Waffle Recipe Ever: The Perfect Waffle Recipe For Two!

Breakfast for dinner might be my favorite thing ever. No, you know what,  breakfast in general is my favorite thing ever. The problem is, I often over do it. (Boyfriend says I always cook for eight at breakfast, even if it's just us eating!) But I think I've finally nailed the perfect waffle recipe for two—promise!—and it's versatile enough to take on all different kinds of flavor mix-ins. The recipe started as this classic waffle batter from the "50 Pancakes & Waffles" insert, when I worked at Food Network Magazine, and has quickly morphed into a family-favorite of our own. SIMPLE WAFFLE RECIPE
(adapted from "50 Pancakes & Waffles" insert)
SERVE: 2

Cooking spray, for the waffle iron
1 cup all-purpose flour
2 teaspoons baking powder
1 1/2 tablespoons sugar
1/2 teaspoon salt
1 large egg
3/4 cup whole milk
3 tablespoons melted butter, cooled slightly
1 teaspoon vanilla extract

1. Preheat a waffle iron. Spray with cooking spray. 
2. Whisk the flour, baking powder, sugar and salt in a bowl.
3. Whisk the egg, milk, butter and vanilla in another bowl. Add the dry ingredients and whisk until just combined. Stir in mix-ins, if using.
4. Pour half of the batter into the prepared waffle iron and cook until golden (according to the waffle iron's instructions). Repeat with the remaining batter.
