Easy Tiramisu Recipe: The Only One You'll Ever Need

/ Monday, October 11, 2010

You need to add this recipe to your emergency recipe arsenal. My tiramisu has saved me on more than one occasion. It's the perfect ninth-hour dessert that tastes like you spent hours putting it together. It's so simple to make, in fact, you may be tempted to make one for yourself one night this week...

EASY TIRAMISU

6 tablespoons instant espresso powder
2 tablespoons cocoa powder, plus more for dusting
1 pint heavy cream
1/2 teaspoon vanilla extract
1/4 to 1/3 cup powdered sugar
1 tub mascarpone cheese
1 to 2 packages Italian lady fingers

1. Dissolve the espresso and cocoa powders in 2 cups hot water.
2. Whip the cream, vanilla and sugar until thick. Beat the mascarpone with a spatial or a mixer set on medium speed until soft. Fold the whipped cream into the mascarpone to combine.
3. Soak some lady fingers in the espresso mixture and arranged in one layer at the bottom of a serving bowl. Top with a layer of the mascarpone mixture. Repeat with the remaining lady fingers and cream, ending with the cream. Dust with cocoa powder and chill until ready to serve.

  1. How much mascarpone cheese is it? I have a large bag and not a tub. Thank you!
