2-Ingredient Avocado Zen Bowl

The easier it is to eat clean, the more likely you'll do it right? At least that's the case for me! Since starting my wedding slim-down, I find myself obsessing over super quick recipes with just a few healthy ingredients. Unless I'm making Funfetti Lemon Bars but you get it...




I guess it's awesome then "health bowls" have become such a thing this year: Zen bowls, wellness bowls, buddha bowls, smoothie bowls. What, are we just, like, over plates now? 


I may not be busting out chia pudding and red quinoa on a regular basis but this 2-ingredient meal does keep me feel fit and full on a semi-regular basis. Here's how it's done...


2-INGREDIENT AVOCADO ZEN BOWL
SERVES: 1 to 2

2 to 3 hard-boiled eggs, peeled and cubed
1 avocado, peeled and cubed 
1 tablespoon extra-virgin olive oil
Kosher salt and freshly ground pepper

1. Put the eggs and avocado in a medium bowl. 
2. Drizzle with olive oil and season with salt and pepper to taste. Very gently toss together to combined. 

Tip: If you'd like some more variety, experiment with other additions like giant beans, Sriracha, basil, beets, whatever! I call it a zen bowl because it's so easy it keeps me calm about "cooking" dinner after work...
