PPAS Acting 2: Cupcake Duo

For the second time this year I had to say 'Goodbye' to a fantastic bunch of students, so I said farewell in the best way that I know how...with cupcakes of course! My Acting 2 students received a batch each of my Red Velvet Cupcakes as well as Vanilla-Vanilla cupcakes inspired by Billy's Bakery.



• 1 stick unsalted butter
• 1 cup granulated sugar
• 3 cups minus 2 tablespoons all purpose flour
• 1 tablespoon baking powder
• 1/4 teaspoon salt
• 1/4 cup 2% milk
• 1/4 cup 0% greek yogurt
• 2 eggs
• 1 teaspoon pure vanilla extract

1. Line cupcake pan with paper liners and preheat oven to 350 degrees. Beat butter and sugar together using an electric mixer. Add in the eggs.
2. Meanwhile, whisk together flour, baking powder and salt. In a separate bowl, mix together the milk and yogurt. Set aside.
3. Alternate adding the dry and wet ingredients into the butter & sugar mixture, in three additions, starting and ending with the dry ingredients. Mix until just combined.
3. Fill each cup about 1/3 way full with batter. Bake for 20 mins, rotating the pan 1/2 way through.
4. Remove from the oven, cool and enjoy!


Frosting
2 stick unsalted butter, room temperature
4 cups confectionary sugar
1/2 cup milk
2 teaspoons vanilla

1. Beat butter, sugar, milk and vanilla. Frost!
