Vegan Snickerdoodle to Ease the Nerves

Our show for the Theatrix 10 Minute Play Festival begins in less than 2 hours! I've been sitting in my apartment, my nerves have been building up, so I had to bake. Vegan Snickerdoodle Cookies. Why not? 

I'd love to be a vegan, but there's no possible way that could feasibly fit with my life. Nevertheless, I love experimenting with vegan baked goods whenever I can. This recipes, from the Vegetarian Times, taste 100% like the real deal! I'll definitely make them again and again. The inside of the cookie is tender and sweet. The outside is slightly crispy & packed with cinnamon-sugar goodness. Yum, yum, yum. One bite and my nerves melted away. One other thing I loved about this recipes is that it's easy on the baking supplies: not too much butter, not too much flour, no eggs and very little sugar. A girl has to be frugal with her ingredients now & again. 


Vegan Cinnamon Sugar Cookies-From Vegetarian Times
  • Cookie Dough
  • 13/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp. baking powder
  • 1 stick (4 oz.) vegan margarine, softened
  • 3/4 cup sugar
  • 1/4 cup vanilla soymilk
  • 1 tsp. vanilla extract
  •  
  • Cinnamon Sugar
  • 1/2 cup sugar
  • 3 Tbs. ground cinnamon
1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. 
2. Sift together flour, corn starch and powdered sugar in a medium bowl, set aside.
3. Using an electric mixer beat margarine and sugar until fluffy. 
4. Add soymilk & vanilla to the margarine mixer. Beat until smooth. 
5. On a medium speed, gradually add the flour mixtures to the margarine, sugar, soymilk & vanilla. Beat until dough is well combined. 
6. Whisk together cinnamon-sugar in a small bow, set aside. 
7. Roll cookie dough into 1 inch balls, roll the balls in the cinnamon sugar and place on the lined cookie sheet. 
8. Bake cookies for 10 minutes, transfer to a wire rack to cool. 
9. Enjoy!

  2. just to let you know, you accidentally listed "sugar" in the step where you mix together the flour, baking powder, etc. it shouldn't be added until the next step with the margarine.
