The Bachelor Predictions & Cupcake Engagement Ring!

One day I will take a better picture of this cake! In the meantime, I want to share this quick-and-dirty cupcake idea with you. It's perfect for an engagement party, bridal shower or watching the finale of The Bachelor cuz duh!

Yep! Those are just cupcakes arranged into an engagement ring cake. I used minis but you could do this will full-size cupcakes, too. I'd love to redo this for my friend's upcoming wedding. When I do, I'll repost this project on a pretty table with decorations, cocktails and all of the other lovely things you've come to expect of a Hey, EEP post.

CUPCAKE ENGAGEMENT RING
SERVES: 8 to 12

FOR THE CUPCAKES
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
Pinch of salt
2 sticks unsalted butter, softened
2 cups sugar
1 cup milk
1 tablespoon vanilla extract

FOR THE FROSTING
Yellow frosting, store-bought or homemade
White frosting, store-bought or homemade
Sanding sugar (optional)


1. Make the cupcakes: Preheat the oven to 350˚F and line a muffin tin or mini muffin tin with paper liners. 
2. Whisk together the self-rising flour, all-purpose flour and salt in a bowl. In another both, beat the butter and sugar until light and fluffy. Combine the milk and vanilla in a liquid measuring cup.
3. Beat the flour mixture into the butter mixture, alternating with the milk mixture, in 3 additions, mixing well between each. Divide the batter among the prepared cups and bake 8 to 10 minutes for mini cupcakes or 15 to 18 minutes for full-size cupcakes. 
4. Remove from the oven. Let cool in the pan 3 minutes, then transfer to wire racks to cool completely. 
5. Add the frosting: To make the ring, arrange yellow-frosted cupcakes in a circle to make the ring base. Arrange white-frosted cupcakes to make the stone. Add sanding sugar if desired.
