Ready for a big main-dish salad and a sparkling sangria recipe that's impossible to mess up?! This easy no-cook meal is the ultimate summer celebration for the gal who would rather sweat by the pool than sweat dinner. Psst! Your friends will totally love it...
Step one: Invite your ladies over for “girls night in" or even better “girls night alfresco!” On the menu, salad and something sparkling. Is there anything better this time of year?
It's time to take advantage of the season's fresh-as-heck raspberries and watermelon. Load up at the grocery store or at your local farmers' market and then use your spoils two different ways: First, to make a sweet spin on a watermelon-feta salad and then in a foolproof sparkling sangria made with IZZE Raspberry Watermelon sparkling water and pink wine, cuz, duh!
My girlfriends and I love a good salad and cocktails date. It makes us feel like we're being "good." Do you do that, too? The salad cancels out the cocktails, right!? Well there's nothing to feel guilty about on this menu. Just fresh, fun, good-for-you food!
Let's start with the cocktail recipe. I like to use frozen fruit as ice cubes in sangria recipes, which is what I did here with frozen watermelon and raspberries. Topped with rosé wine and IZZE sparkling water, each sip is sweet, bubbly and refreshing. You could make the same recipe with pink lemonade swapped in for any of your girlies who are expecting, which seems to be a growing number of our crew.
The salad is an extra-fresh twist on a watermelon-feta salad, which is an obsession of mine each and every summer. To keep things simple, I stick with no-cook ingredients like raspberries, cucumber wedges, salty feta cheese and roasted salted almond to give the salad some heft. Instead of bothering with a whole dressing recipe, just drizzle with some lime juice and olive oil—poof! You're done.
WATERMELON, FETA & RASPBERRY SALAD
SERVES: 4
1/2 watermelon, cubed
12 ounces raspberries
1 cucumber, peeled and cubed
1/2 cup roasted almonds, chopped
1/2 cup crumbed feta cheese
Juice of 1 lime
Extra-virgin olive oil, for drizzling
Flakey sea salt and freshly ground pepper
Fresh mint, for garnish
1. In a bowl, gently toss the watermelon, raspberries, cucumber, almonds and feta until combined.
2. Drizzle with the lime juice and olive oil to taste. Season with salt and pepper. Top with mint (optional).
TIP: For a heftier salad, add sliced grilled chicken or steak.
RASPBERRY-WATERMELON SPARKLING SANGRIA
MAKES: 1 drink
1 to 2 cubes frozen watermelon
3 to 4 raspberries
Chilled rosé wine
Fresh mint, for garnish
1. Put the watermelon and raspberries in the bottom of a chilled cocktail glass.
2. Fill halfway with rosé. Top with IZZE Raspberry Watermelon.
3. Garnish with mint.
