2-Ingredient Chocolate Cake—Easiest Recipe Ever!

/ Sunday, March 8, 2015

Have you ever found yourself on the couch in dire need of homemade chocolate cake with nary an egg nor stick of butter in sight? Yeah! It happens. Like, more often than you'd think, right? But there's a solution! Hint: It's edible (duh) and only requires two ingredients, you may already have at home.

Did you know that cake mix plus soda is all you need for a seriously amazing dessert? Nothing else! It's a bodega babe's dream. No grocery store nearby, no problem!

Listen, I'm not an expert, I don't know why this works but it does and it's awesome. As someone who has forgotten to put eggs in my cake mix before, I'm not surprised. And to all of your cake mix haters out there, relax! You can make cake from scratch another time. We're talking about a gotta-eat-it-now, can't-focus-until-there's-cake-in-my-mouth, sugar emergency.

I love the subtle combo of chocolate cake mix and cream soda. If you're looking for something different, though, feel free to swap in ginger ale...cherry soda...root beer...use your imagination!

Since the "recipe" is so easy, you can go crazy with decorations. Something as simple as melted chocolate chips and rainbow sprinkles (pictured) can turn a plain cake into a masterpiece. Other options: Whipped cream and fresh fruit, loads of crazy ice cream, confectioners' sugar, proper frosting. You know the drill xox

2-INGREDIENT CHOCOLATE CAKE
SERVES: 6 to 8

1 (18.25-oz.) box chocolate cake mix
1 (12-oz.) bottle or can cream soda

1. Preheat the oven to 350˚F. Lightly coat a cake pan with nonstick cooking spray.
2. Mix the cake mix and soda in a bowl until combined with a few lumps. Pour into the prepared pan and bake as the label directs.
3. Let cool; release from the pan. Decorate however you'd like!
