Cucumber White Wine Spritzer

I have big-batch summer cocktails on the brain—you know the standards, sangria, rum punch, mojitos—and I'd love to share a new one with you if you're interested. This Cucumber White Wine Spritzer is super fresh, easy to make and budget-friendly.



What does it taste like, you ask? * She strokes her chin * like a Pimm's Cup without the Pimm's...if that makes sense. Crisp, refreshing, perfectly sweet. Meaning not too much.
FOR A CROWD: CUCUMBER–WHITE WINE SPRTIZER 
SERVES: 4

8 ounces gin
4 ounces elderflower liqueur
4 ounces fresh lime juice 
1 (750-ml) bottle dry white wine, chilled, such as Pinot Grigio (I used Thorny Rose '11)
1/2 English cucumber, thinly sliced
Fresh mint leaves, for garnish

Stir the gin, elderflower liqueur and lime juice together in an ice-filled pitcher. Top with the white wine. Add the cucumber and mint leaves, for garnish, if desired.

SERVES: 1

2 ounces gin
1 ounce elderflower liqueur
1 ounce fresh lime juice 
3/4 cup dry white wine, chilled, such as Pinot Grigio
English cucumber, thinly sliced
Fresh mint leaves, for garnish

Stir the gin, elderflower liqueur and lime juice together in a tall ice-filled glass. Top with the white wine. Add the cucumber and mint leaves, for garnish, if desired.

  1. This looks amazing for summer! Reminds me a bit of a gin gimlet (my fave cocktail) but with lots of wine too. Love it!
