GLUTEN-FREE
PEANUT BUTTER COOKIES
MAKES:
about 2 dozen cookies
1 cup
crunchy peanut butter
1 cup
granulated sugar, plus more for rolling
1 large egg
2 teaspoons
vanilla extract
1/4
teaspoon salt
1/2 cup
semi-sweet chocolate or peanut butter chips (optional)
1. Preheat
the oven to 350˚. Line 2 baking sheets with parchment paper; set aside.
2. Beat the
peanut butter, sugar, egg, vanilla and salt in a bowl with an electric mixer
until combined. Roll tablespoonfuls of dough into balls; roll balls in sugar
and arrange on the prepared baking sheets about 1 inch apart.
3. Flatten
balls with fork in a crosshatch patter and bake until golden, about 10 minutes.
Let cook on the baking sheet 3 minutes, then transfer to wire racks to cool completely.
