Cookies 'N' Cream Cookies: New Favorite Treat!

You'll always find some kind of homemade cookie dough living in my freezer. Right now I'm on a cookies 'n' cream cookie kick, so these pre-rolled Oreo-flecked dough-balls are at the ready. The cookies come out soft and chewy with big crunchy chunks of Oreo throughout—let them blow your mind as they did mine, then let me know what you think!



COOKIES 'N' CREAM COOKIES
MAKES: 2 dozen cookies

1½ cups all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda
1 stick unsalted butter, at room temperature
⅓ cup packed light brown sugar
½ cup granulated sugar
1 large egg
2 teaspoons vanilla extract
15 to 20 Oreo cookies or other chocolate–cream filled cookies

1. Preheat the oven to 350˚. Line a baking sheet with parchment. Whisk the flour, salt, baking powder and baking soda in a bowl; set aside. 
2. Beat the butter, brown sugar and granulated sugar with a mixer on medium-high speed until light and fluffy. Add the egg and beat for 2 minutes. Beat in the egg and vanilla extract. Add the flour mixture and beat until just combined. Add the whole Oreo and beat until crushed into pieces. Chill the dough 10 minutes. 
3. Roll rounded tablespoons of dough into balls and arrange on the prepared baking sheet, about 1 inch apart. Bake until golden, 10 to 15 minutes. Transfer to racks to cool.
