Peanut Butter Cheese Cake Minis

Good morning! Yesterday was bittersweet, and not just because of the chocolate. WOW! Moving on. So yesterday was our very last student teaching seminar (sweet part), however it was also the very last day of communal snack(bitter part). 15 weeks & 15 snacks filled with pure Ed. Theatre joy are finally at an end.

I usually bake the snack for student teaching on Monday evenings. This week, however, there was too much pressure resting on the final treat...by Tuesday evening I still had not decided what to make! It was the lovely Lauren Lydiard who finally brought clarity to my snack-time vision. "Cream cheese!" she called out when I asked her what she'd want for her final sweet. I thought back to the mini cheese cakes I made for Theatrix! earlier this year. It was settled...Paula Deen, here we come.
Who doesn't love biting into a chocolatey surprise? Paula Deen's recipe for Peanut Butter Cheese Cake Minis is a salty, sweet & tasty way of having your cheese-cake and your candy too. That girl knows how to take decadent ingredients and weave them together in a way that is pure genies! I've said this before and I'll say it again, I love Paula's recipes for desserts. Come on kids, she's the Queen of butter & sugar...she can do no wrong when it comes to sweet. At least most of the time ;) 

There's nothing like a batch of cheese-cake minis to sweeten the 'Goodbye' of four beautiful years together. As the weeks of college wind down more & more baking will be %163 necessary to keep my spirits up. For now, take a peek at some of the gorgeous peeps who have been chowin' down on weekly snack since the beginning of the semester. Above...the beautiful & talented Ms. Emily Weidenbaum. The always adorable & artistic Lisha Brown eat her mini-cheese cake with the same excitement she brings to all of her actions. Geez my friends make sweets look so good!

Paula Deen's Peanut Butter Cheese Cake Minis 


Ingredients

Crust:

  • 1 1/2 cups graham cracker crumbs
  • 4 tablespoons sugar
  • 1/4 cup (1/2 stick) butter, melted
  • 12 bite-size peanut butter cups

Filling:

  • 2 (8-ounce) packages cream cheese, at room temperature
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon pure vanilla extract or almond extract
  • 2 eggs

Directions

Preheat oven to 350 degrees F. Place a paper cupcake liner in each cup of a standard muffin pan.

To make crust, in a bowl, combine graham cracker crumbs, sugar and melted butter until crumbs are moistened. Press crust into bottom of each muffin cup. Put 1 peanut butter cup into the center of each crust.

Beat cream cheese with a handheld electric mixer until fluffy. Add sugar, flour, and vanilla, beating well. Add eggs, 1 at a time, beating well after each addition. Spoon cream cheese mixture over peanut butter cups and graham cracker crusts. Bake until just set, about 20 minutes. Allow to cool completely before serving.

  2. i have been meaning to try my hand at these delicious treats forever and i finally got down to making them! they came out great! i packaged them in little brown paper bags with notes on them for the RA staff that graduated at 13th street. i hung the bags on their door handles with string! it was adorable and they loved them! excellent choice. next up for me is the vegan peanut butter dark chocolate treat! - scott
