I had to give a cupcake to my cooperating teacher at PPAS because (apparently) the smell was so intoxicating. Despite the sticky mess that consumed his fingers, I believe he enjoyed them. My classmates gave snack an A+ rating as well. The fluff totally turns into glue once it hits your hands, so be careful. We got it all over our homework but it was SO worth it.
1 chocolate cake box mix (with needed ingredients)
1 teaspoon vanilla
1/4 teaspoon salt
1 sleeve graham crackers, crushed
1 stick unsalted butter
1/2 cup sugar
1 jar marshmallow fluff
1. Preheat oven to 350 degrees and line a muffin tin with cupcakes lines.
2. Crush one sleeve of graham crackers in a zip-lock bag. Place the crumbs in a bowl.
3. Melt one stick of butter in the microwave(one minute on HIGH). Add melted butter and sugar to the graham cracker crumbs. Stir until the crumbs are evenly coated.
4. Prepare cake mix according to the directions, add vanilla and salt. Mix to combine.
5. Drop one generous tablespoon of crumb mixture into the bottom of each muffin cup. Pack down the crumbs with your fingers to make an even crust.
6. Spoon the cake batter into the muffin cups so that they're 2/3 full.
7. Bake for 20 minutes, rotating the pan half way through.
8. Remove the cake and let cool for 10 minutes on a wire rack.
9. Top each cupcake with 1 heaping tablespoon of marshmallow fluff (TIP: it's easier to scoop-spread-smush fluff if you spray the spoon with a little cooking spray first)
10. Decorate you cupcakes with more crumbed graham crackers, chocolate or even more marshmallow. Enjoy!
