Cinnamon Raisin Bread-Cakes with Jam

/ Sunday, February 8, 2009

Forgive me Father for I have sinned, it has been one week since my last blog entry and I used a baking mix! Heathen...I know.

I had a bag of cinnamon raisin bread mix in my cupboard. I was hankering to give it a try. Similar to the asiago & sundried tomato bread, the cinnamon raisin mix only required a bottle of beer & a hot oven. How could I resist? Inside of the bag there was a special packet of cinnamon sugar that you swirl into the bread dough. You can see the spicy sugar on top of bread-cake above, however the cinnamon swirls did not make it all the way through to the bottom. To save these tiny treats from totally dryness, I sliced the suckers open and smothered 'em with strawberry jam from PB & Co. They were salvaged quite well.

Do any of y'all have a favorite recipe for cinnamon raisin bread from scratch? I've wanted to try Martha's recipe but always end up buying a bag at Trader Joe's instead. Oops.
