Carrie, Couscous and Foodie Fight

We had a low key night in on Friday with some roasted veggie couscous, fresh bread and Foodie Fight. I roasted up:

1 large carrot chopped
1/2 large sweet potato peeled and cubed
1 chopped yellow squash
1 slice red onion
1 bunch of asparagus cut into bite size pieces.

Just cover the veggies with EVOO, salt-pepper and roast them until they're tender in a hot oven. In the meantime whip up some couscous. I like to use Trader Joe's Whole Wheat Couscous. I usually just make it in the microwave. When the veggies are done, mix them with the couscous, some goat cheese and more cracked pepper. Dinne is served. Protein, Carbs, Veggies, Fat and a little sugar...you're set.

I decided to make the Asiago Tomato bread from work. You can do it the real way and use the yeast packet/stand mixer or do what I did and take the easy way out, stirring the mix with a bottle of beer and popping it in the oven. There was a little too much fake cheese flavor for me. It tasted funky. The crust was yummy though. There's a cinnamon raisin version that I'm eager to try. Hopefully it will be a bit tastier.
