I came up with these Candy Corn Meringue Sandwich Cookies out of laziness. Like most sweet-loving gals in the world, I'm obsessed with French macaron cookies (not to be confused with macaroons) but don't have the patience to make them—they're tricky! Regular meringues are far more straightforward and only require a few ingredients.

Mwaha-ha-ha! Take that sugar cookie men. I've been dreaming up some unique Halloween dessert ideas and this twisted thought came to mind: Why not employ the same "stained-glass" technique often used to make Christmas cookies to make blood-red wounds on cookie people? It's so easy! Just decide where you'd like to place a fatal gash on your cookie person, then fill with crushed up candies and bake. When the candies melt, they pool and keep their wet sheen (even after cooled) so it looks like fresh blood. Here's how I did it: 


BLOODY ZOMBIE SUGAR COOKIES

Your favorite sugar cookie dough
All-purpose flour, for dusting
Red Jolly Ranchers (cherry-flavored), crushed
3 tablespoons semisweet chocolate chips

1. Roll out the cookie dough on a lightly floured surface to 1/8-inch-thick. Use a gingerbread man cookie cutter to cut out shapes, transfer to a parchment lined baking sheet. 
2. Use a pairing knife to cut gashes into each man; remove the dough. Fill the holes with crushed Jolly Ranchers; refrigerate 15 minutes. 
3. Bake at 350˚ for about 13 minutes; let cool on the baking sheet 5 minutes before transfer to a wire rack to cool. Let cool completely. 
4. Meanwhile, put the chocolate chips in a small resealable plastic bag. Microwave in 10 second internals, kneading the chips with your fingers in between, until melted. Squeeze the chocolate down to one corner of the bag, twist it, snip the corner and use the chocolate to pipe on "X"s for eyes.
